RAW CARROT SALAD

We've been getting these delicious carrots from a local farm and I've been loving this raw carrot salad.
Toast pepitas.
Use a vegetable peeler to make carrots into ribbons.
Mince a serrano pepper.
Zest and juice a lemon.
Chop cilantro.
Saute carrots in oil for 30 seconds (or skip this step).
Mix everything together with olive oil, salt and pepper.
I don't tend to use carrots as the main part of a dish often, but I love this one! The other way I've used carrots as the main part of a meal is this carrot dressing.
