SWEET POTATO PIE HAPPY BIRTHDAY
This year we are inundated with rain, an "atmospheric river". The more terrestrial river, also known as the American River, overflows its banks. Bathrooms in Discovery Park are half underwater. The beach we go to at William Pond is totally underwater.
Exactly a year ago I was very pregnant and even though the scant rainy season seemed long in our review mirror, we woke to a refreshing rain shower and that night we went to sleep that night with a baby in our arms.
I had some cramps that morning, but I felt great and assumed I had even a couple more weeks before this little ones appearance, but he had other ideas and arrived at 8:47pm.
So Saturday we celebrated Ned's birthday with friends. It rained all week but cleared up by Saturday morning so we celebrated in the park. A gorgeous hawk with a boldly striped tail and bright red coloring on it's shoulders flew over a couple times and then landed quite near the party on a fence.
We had little frittata muffins and roasted potatoes and I made four sweet potato pies!
Recipe
Crust:
1 cup pumpkin seeds (or pecans)
1 cup oats
1/2 tsp salt
Filling:
4 cup sweet potato
1/2 cup non dairy milk
1/2 cup maple syrup
3tbsp arrowroot powder
1tbsp pumpkin pie spice
Pinch of salt
Mix flax and water
Dice and Steam sweet potatoes
Food processor the dry ingredients of crust. Then add flax mix.
Press crust mix into pie pan with parchment paper.
Put all filling ingredients in food processor and mix for 60+ seconds.
Pour filling onto crust. Bake for 35 mins.
